Fabrice Prochasson, one time holder of the legendary Meilleur Ouvrier de France (Best Craftsman of France), is also Coup de pates’s Director of Creation and Innovation.

Nicknamed the ‘travelling creator’, he has a gastronomic history which has seen him ply his trade in New York, Beijing, Tokyo and Athens, alongside his French homeland.

His expertise gives him an all-round, expert vision of the catering profession and these insights further push the boundaries of what’s possible in frozen bakery.
